This bean mash is a great healthy substitute to mashed poatato, especially if you're looking for a more fibre based, lighter mash alternative and it has a really pleasing texture too. It pairs really well with grilled meats and roasted vegetables.

- 3 400g tins butter beans (drained and rinsed)
- 100ml chicken or vegetable stock
- 50ml single cream (or non-dairy cream alternative)
- 2 tsp ground black pepper
place the drained and rinsed butter beans into a saucepan with the stock over a medium heat and mash with a potato masher.
When they are heated though, stir in the cream and pepper to serve.
